Turkey Meatloaf with Kale

Serve with a thick slice of Russian Rye bread and you’ll have a very satisfying meal that even the kids will adore.


11/2 pounds ground turkey*
(*substitute ground turkey with ground chicken)
½ cup minced onion
1 cup bread crumbs
1 egg
½ cup thinly sliced celery
1 1/2 cup Cook’in Greens Kale
1 teaspoon minced garlic
¼ cup milk
½ tsp salt
Pepper to taste
½ tsp dried basil and oregano
2 tbsp Dijon mustard
½ cup grated cheddar cheese ( optional)

Preheat oven to 350F. Oil a standard over-proof loaf-type pan.

In a medium size bowl, mix turkey, onion, bread crumbs, egg and celery.

Cook Cookin’ Greens –  Kale  according to package instructions or add frozen as kale will cook in the oven.

Add kale to med-sized mixing bowl . Stir. Add garlic, milk, salt, pepper, basil, and oregano. Mix together well.

Pat mixture into oiled loaf pan.Spread top of meatloaf with a thin layer of Dijon mustard and bake for 45 minutes

Allow to stand for 10 minutes. Serve topped with grated cheddar cheese.
