Cookin’ Greens with Linguine, Garlic and Pine Nuts

Serves 4 (Recipe works with ALL Cookin’ Green products)


2 Tablespoons Olive Oil

2 cloves Garlic, minced

1 Onion, finely chopped

2 Carrots, finely shredded

1/2teaspoon Salt

1/2cup thinly sliced Sun Dried Tomatoes

2 cups of your favorite Cookin’ Greens product (frozen)

1/2cup stock or water

1/2pound Linguine

1/4teaspoon pepper

1/2cup freshly grated Parmesan Cheese

1/4cup toasted Pine Nuts


  1. Heat olive oil in large skillet. Add garlic and onion. Cook for 3-5 minutes or until soft.
  2. Add carrots, salt, sun dried tomatoes , Cookin’ Greens. .Lower heat and simmer for 5 minutes.
  3. Bring a large pot of water to boil .Add linguine , stir and cook until al dente,9 to 12 minutes. Drain pasta. Add to skillet. Toss with cooked vegetables and greens.
  4. Season with pepper and cheese Mix well.
  5. Garnish with toasted pine nuts.
