Risotto with Cookin’ Greens

Make 4 servings

(Recipe works with all Cookin’ Greens products)


4 Tablespoons Butter or Olive Oil

1 Small Onion, minced

2 Cups Cookin’ Greens (any product)

1/2 Cup Dry White Wine

1-1/2 Cups Arborio Rice (short grain rice)

5 Cups Chicken or Vegetable Stock

1/4 Teaspoon Salt

1/8 Teaspoon Pepper

1/4 Cup Parmesan Cheese


  • In a large saucepan melt 2 tablespoons butter over medium heat and sauté onion until it softens, 3-5 minutes.
  • Add the rest of the butter, Cookin’ Greens (from frozen) and rice.
  • Stir until the rice is coated with butter. Add the wine. Raise heat to medium high.
  • Begin to add the stock, 1/2 cup at a time, stirring after each addition. When absorbed, add more.
  • It will take up to 30 minutes the rice to absorb the stock. Add salt, pepper,  parmesan. Stir, serve and enjoy!
