Cookin’ Greens – Simple Frittata

Serves 4


2 cups              Cookin’ Greens product of your choice

1                      Clove Garlic, minced

4 tbsp              Olive Oil

5                      Large Eggs

1/2 Cup           Freshly Grated Parmesan Cheese

1/2 tsp             Salt

1/4 tsp             Pepper



  1. In a 12-inch non-stick skillet, heat 2 tbsp of oil over medium heat. Sauté the Cookin’ Greens product of your choice and garlic for 2 minutes, until heated through. Remove cooked greens from pan – put aside.
  2. In a large bowl, beat the eggs with the cheese; add the sautéed greens mixture, salt and pepper.
  3. Add remaining oil to non-stick skillet. When the oil is hot, lower temperature to low and add egg mixture.
  4. Cook until Frittata is set, 10-15 minutes

    Saw you on Dragon’s Den tonight. Your products are not carried in Campbell River (Vancouver island) but I see they are in Courtenay, 35 mins away so I will get some next time I am there. I am looking forward to trying them, as I am an eater of green leafy veggies, but find as a single person I never get through a whole cabbage or container of spinach. As I find your recipes, I hope to be able to make soups, adding root vegetables as well and also hoping for some fish soup recipes. I love the idea of adding them to pizzas. thanks so much for a super new food package which I am sure will add to a healthy diet. Did I say your were impressive on the program tonight?
