Cookin’ Greens Chopped Spinach Stuffed Mushrooms with Feta

Ingredients

1 tbsp Olive Oil

1/3 cup Leeks

10 oz  Cookin’ Greens Chopped Spinach

2   Large Egg Whites, beaten

½ cup  Seasoned Bread Crumbs

½ cup  Feta Cheese

1/8 tsp  Ground Nutmeg

¼ tsp   Salt

1/8 tsp  Pepper

18-20  Medium Mushrooms, Stems Removed; 1 ½ – 2 in. diameter

 

 Method

  1. Preheat oven to 350F.  Use a nonstick baking sheet
  2. In a nonstick skillet, heat the olive oil over a medium high heat.  Add leeks and sauté for 5 minutes or until soft.  Add Cookin’ Greens Chopped Spinach and heat through for 2 minutes
  3. Transfer to a large bowl and   stir in egg whites, bread crumbs, feta cheese, and nutmeg.  Add salt and pepper.  Stir to combine
  4. Stuff each mushroom with 1 tablespoon of the spinach mixture
  5. Place mushrooms cap size down on the nonstick baking sheet.  Bake for 15 minutes or until soft
