Cookin’ Greens Garlic Creamed Chopped Spinach

Serves 4    (Recipe works with all Cookin’ Green products)

Ingredients

1 Tablespoon Olive Oil

1 teaspoon Butter

2 Leeks, chopped and washed well

2 cloves Garlic, finely minced

2 cups Cookin’ Greens Chopped Spinach (frozen)

1 Tablespoon All Purpose Flour

1/2 cup Cream

1/2 cup Milk

1/8 teaspoon Nutmeg

1/4 teaspoon Salt

1/8 teaspoon Pepper

Method:

  1. Heat the olive oil and butter in a large sauté pan over medium heat.
  2. Add the leeks and garlic. Sauté for 3 minutes or until soft .
  3. Add the Cookin’ Greens Chopped Spinach and sauté for 3 minutes on med heat.
  4. Add flour. Stir to combine. Add cream, milk, nutmeg, salt and pepper
  5.  Simmer for 3 minutes or until sauce thickens.
