Curried Potatoes with Cookin’ Greens Designer’s Mix

What a winning combination! Designer’s Mix includes spinach, collards, rapini, yellow beans and onions. Serve with fish, chicken, meat.

Prepare Cookin’ Greens from frozen.  This recipe works with all Cookin’ Green products.

Serves 4 – Side Dish


1 pound Yukon Gold or Red Potatoes, peeled in ½ inch cube

2 tbsp olive oil

1 tbsp minced garlic

1 cup chopped onions

2 tsp curry powder

21/2 cups Cookin’ Greens Designer’s Mix (from frozen)

1 tbsp lime juice


  1. Place potatoes in a medium sized pot of water. Place over high heat.: Bring to the boil .Partially cover ,simmer for 8-10 minutes or until tender. Drain well, set aside in bowl.

2. Heat a large skillet over medium heat. Add oil. Add garlic, sauté for 30 seconds. Add onions. Sauté over medium heat for 5 minutes or until they begin to soften.

3.  Add curry powder. Stir. Add Cook’in Greens Designer’s Mix (from frozen). Sauté for 5-7  minutes on low heat. Stir well.

4. Add potatoes. Heat through and season to taste with freshly ground pepper and salt. Squeeze lime juice over potatoes and greens.
