Edamame Hummous with Cookin’ Greens – Chopped Spinach

This will be a standby dip in your household.Easy to prepare and delicious. Buy shelled edamame in your freezer section of supermarket.

*Prepare Cookin’ Greens from frozen. No thawing required. Drain if necessary

4 to 6 servings


2 cups cooked shelled edamame

*1 cup Cookin’ Greens  Chopped Spinach- cooked according to package directions (Microwave)

½ cup tahina or cashew nut butter

¼ cup extra virgin olive oil

2 cloves garlic , minced

2 tbsp lemon juice

½ tsp salt

1/8 tsp pepper

1 tsp paprika

¼ cup cilantro or chopped Italian parsley leaves for garnish


1.Put  edamame, spinach, tahina, olive oil, garlic and lemon juice in a food processor, sprinkle with salt and pepper , puree.

2.Taste, add more lemon juice or oil. Serve, sprinkled with paprika and cilantro .
