Cookin’ Greens Spinach and Lentil Soup

Yield: 4 cups.
Serves 3-4


  • 2-3 tbsp (30-45 ml) olive oil or vegetable oil
  • 2 Toppits® Frozen Garlic Cubes (or 2 finely chopped garlic cloves)
  • 1/2 cup (125 ml) thinly sliced onion
  • 1/2 tsp (2 ml) cumin,1/4 tsp (1 ml) cayenne pepper
  • 2 cups (200 g) Cookin’ Greens™ Spinach
  • 2 cups (500 ml) vegetable or chicken stock,
  • 1 cup (250 ml) canned lentils


1)      Heat oil in medium size pot: add garlic, stir 30 seconds, add onion, cumin, cayenne. Stir. Cook for 3 minutes on medium heat.

2)      Add Cookin’ Greens™ Spinach. Cook 2 minutes. Add 2 cups stock, lentils. Simmer for 5 minutes. Serve.

Do not over cook your greens. Ensure greens are cooked evenly. For food safety reasons, internal temperature should reach 71C or 160F. Keep frozen until ready to use.
Store unused product in freezer.
