Rapini with Coconut and Spices

Welcome to day 2 everyone!!!

Michelle, from the Tiffin Box, created a recipe with for Bruce Croxon, using the Cookin’ Greens Chopped Rapini.

Bruce was one of the harder dragons to create a recipe for. He is the Ambassador of Anaphylaxis Canada (www.anaphylaxis.ca), a not-for-profit organization started in 2001 by a small group of people living with food and other allergies. Bruce’s own children suffer from severe food allergies, this posed as a challenge because we wanted to create a recipe that his family would enjoy.

Michelle did her best to avoid any allergens, and still make a recipe that would appeal to Bruce’s love of spicy Jamaican food. The result is the Cookin’ Greens Chopped Rapini with Coconut and Spices – What a Success! Or as Michelle puts it – “This dish is amazingly vegan, gluten and dairy free, but packs enough of a flavour punch to smoke any dragon out of his den. I do spice like no one else.”
