Cookin’ Greens Turkey and Artichoke Heart Panini with Pesto

Serves 2

Ingredients:

1 tbsp extra virgin olive oil

1 cup Cookin’ Greens Artichoke Heart Quarters, from frozen

1/4 tsp each sea salt and pepper

2 ciabatta buns, halved (or bun of your choice)

1/4 cup prepared basil pesto (can find prepared pesto’s in deli section or Italian foods section of grocery store)

4 oz deli sliced roasted turkey

4 slices part-skim mozzarella

Method:

Heat oil in a non-stick skillet set over medium heat. Add the artichoke hearts from frozen, salt and pepper Follow cooking instructions on back of packaging. Cook for 6-8 minutes or until heated through.

Spread pesto over the cut side of each bottom bun. Top with turkey, Cookin’ Greens artichoke heart quarters and cheese; cap with top halves. Toast in a Panini press or grill pan until well marked and heated through.
