Cookin' Greens Cauliflower and Artichoke Heart soup

Our Artichoke Hearts recipe contest third place recipe was submitted to us by Alyse Raponi.

Ingredients

 1 large cauliflower, stem removed and florets separated

1/2 bag Cookin Greens artichoke hearts

3 small onions, quartered

4 cloves garlic, peeled

1 tsp salt

3 tbsp EVOO

500-750ml broth

1/2 cup canned coconut milk

Parsley for garnish

Toasted peanuts, chopped

Method

 Preheat oven 400F

 Place all vegetables, oil and salt on a parchment lined baking sheet. Toss to coat.

Roast, for 25-30min, turning once half way through cooking time.

 Place veggies into a blender/food processor. Add broth and milk. Puree until smooth.

 Garnish with parsley and enjoy!
